The volcano rice arrived at our table to a chorus of wows: three hot stone bowls sizzling, crackling and steaming hot, with a colorful assortment of vegetables and meats arranged around a perfectly round yellow egg yolk.

There's nothing quite like a bright ceviche to freshen things up and make you forget the days are getting shorter and the nights a little colder. Thanks to Peruvian ceviche experts, Latin Bites, for reminding us what a little citrus, a few slivers of red onion and some perfect seasoning can do for a fresh piece of shrimp.
Caesar Salad Martinis, Sliders, Tandoori and More at the 29th Annual Caesar Salad Competition
I really enjoyed a Peruvian Caesar salad by Chef Masaru of Latin Bites, a single bite of endive with crispy-somethings and a Peruvian pepper-based dressing, but the ingredients used were so extensive that it didn't make as strong an impression as the more easily understood offerings.

Add News Story here The perfectly bite-sized, spoon-shaped endive leaf (at right, below) was home to a creamy Caesar-inspired mousse that included roasted Peruvian panca peppers that rested on top of poblano, mushroom and a slice of cherry tomato.
When he opened LATIN BITES in the small, 30-seat restaurant that now houses Oxheart, Peruvian-born Roberto Castre figured his modern Peruvian cooking would be a tough sell in Houston, but he was wrong. Add News Story here
